I've been running the GNex since about a month after release. I love it. GNex/Razr Maxx are the top two phones out right now so you made a good choice.
First things to do are to pick your OS, screen protector, and case. I'm running stock android rooted, an xo shield and the diztronic matte case.
OS, if you're keeping stock android, you should root it. If you want to play around with custom roms, check out Cyanogenmod.
Shield, you don't need a screen shield, but I like having one.
Case, I found the back of the GNex a bit slippery, and I love my diztronics case. It was like 8 bucks or something and is awesome.
After you have the basics set, time for some apps.
1) Amazon app store. Free app every day. Usually they're shitty games, but there have been some gems so far.
2) Giant list of apps I use that aren't games: Some torrent downloader, Chrome Beta, ES File Explorer, Evernote, Foodspotting, Foursquare, Light Flow, Mint, Netflix, Pandora, Pocket Casts, Shazam, Shopper, Subsonic, Syncmypix, TeslaLED, Titanium Backup, some keyboard replacement (Swype? Touchpal?), TripAdvisor, Wifi tether, Yelp... and most importantly, VOLUME+ (the speaker on the GNex, for some reason, is retardedly quiet. This app lets you turn it up).
3) Set up any way you're streaming stuff to your device. I run subsonic off my server at home to share all my music really easily. If you want to share locally hosted movies or anything, there are ways to do that too.
4) Games. I'm sure you can figure these out on your own.
Some odd things about the GNex:
-My battery seems to last longer whenever I have the wifi antenna on... even if I'm not connected to wifi. It shouldn't work that way but I swear it does and I have no reason why.
-Occasionally it won't connect to a network, or the bluetooth will start cutting out. Turning it off and on takes care of this.
-Last time I checked, there still wasn't a car dock out that fit the LTE GNex's 3-pin connector. Instead of having to dial into your verizon voicemail, it's available either by a downloaded attachment via email, via your phone's voicemail menu, or by the google voice app. Also, it will automatically transcribe the email for you so you usually don't even have to listen to them.

M0rphling if it can't connect to the network you don't need to turn it off and on you can just put it into airplane mode and then turn airplane mode off. A lot quicker and ends up reconnecting to the network in the same amount of time. Works for me at least.

The way I do it, when I want to give out a number to someone I don't want to have my real number, I give my google voice number.
Everyone I actually know gets my real number.
My voicemail is set up so all calls get sent to my google voice account, no matter which number they actually call.
